Opening Week at Birds & the Beets
It's always great to see a new cafe open in the city and it's even better when they get so many things right off the bat. Gastown's Birds & Beets brings good food and a solid coffee program to the neighbourhood in style.
Working with Simcic + Uhrich Architects on the design of the room hey took the long, cavernous room and sectioned off the space with seating throughout including banquettes lining most of the cafe. The bricks from the heritage building built in 1906 are on full display while sheets of Baltic Birch plywood and raw steel provide a nice contrast. Simcic + Uhrich have worked on a variety of projects around the city including for Brassneck Brewery and Timbertrain Coffee Roasters.
Coffee at the Birds & the Beets comes from Victoria's Bows & Arrows Coffee with espresso drinks prepared on the La Marzocco Linea PB and filter coffees made with Fetco brewers. The cafe also brings in their tea from Main Street's Cultivate Tea while also preparing their own selection of kombucha, ginger beer and sodas prepared in-house and with a liquour license they'll be serving beer and cider from some local breweries.
The food program at Birds & the Beets is well thought from sourcing their ingredients to preparing almost everything on the menu in-house including the pickled vegetables, yoghurt and loaves of brioche bread. Along with baked goods and breakfast, they serve a selection of sandwiches and salads for lunch.
And providing some added ambience to the cafe, Birds & the Beets has partnered with local floral designers The Wild Bunch selling their fresh and dried bouquets in-store which they try to source locally whenever possible.
